Ingredients
- 1 acorn squash sliced
- 2 tablespoons olive oil
- 1/4 cup parmesan cheese grated
- 1 teaspoon garlic powder
- salt and pepper to taste
Instructions
- Preheat oven to 400º
- Cut the squash in half, remove the seeds with a spoon, then slice the squash into 1/2 moon shaped pieces (see post for tips on cutting an acorn squash)
- In a large bowl combine olive oil and garlic powder
- Toss the squash in oil then lay squash out on a baking sheet sprinkle each slice with parmesan cheese then season with salt and pepper
- Bake for 30 minutes until the squash is tender and the cheese is golden brown
