Ingredients

  • 1 cup (150g) almonds
  • 1/2 cup (70g) hemp hearts
  • 1/2 cup (35g) shredded, unsweetened coconut, plus more for rolling
  • 1/4 tsp cinnamon
  • 1 Tbsp low carb sweetener (optional)
  • pinch salt
  • 1/4 cup (60 mL) almond butter
  • 1 Tbsp coconut oil, melted

Instructions

  1. Combine almonds, hemp hearts, coconut, cinnamon, sweetener, and salt in a food processor. Pulse until finely ground.
  2. Add almond butter and combine.
  3. Pour in melted coconut oil while food processor is running, and process until the mixture forms a ball.
  4. Scoop with a cookie scoop into 16 balls. Chill for 5-10 minutes or until they're easy to roll.
  5. Roll into balls and then roll in coconut.
  6. Chill for another 10 minutes or more, until firm. Store in the refrigerator.
