Chickpea dish with garam masala could be a flavorous twist on a meal homework staple. - For the Curry Chickpea Wraps
- 5 9" spinach or whole wheat wraps
- 2 and 1/2 cups fresh spinach, loosely packed
- 2 and 1/2 cups curry chickpea salad
- For the Curry Chickpea Salad
- 2 and 1/2 cups chickpeas (about 1.5 cans of chickpeas)
- 2 tablespoons olive oil mayonnaise or vegan mayonnaise
- 1/4 cup red onion, diced
- 1 medium carrot, diced
- 1/4 cup unsalted cashews, chopped (optional)
- 1 tablespoon fresh lime juice
- 1 tablespoon fresh chopped cilantro
- 1 teaspoon garam masala
- 1 teaspoon hot sauce (optional)
- 1/2 teaspoon turmeric
- 1/4 teaspoon salt
Instructions
- For the Curry Chickpea Salad
- Rinse and drain can of chickpeas. Pat dry with a paper towel or clean towel to remove excess moisture.
- Combine chickpeas, mayonnaise, and seasonings in a medium mixing bowl. Use a fork to mash the chickpeas; make as chunky or as smooth as you prefer.
- Add the remaining ingredients to the chickpeas. Stir to combine. Taste for seasonings.
- For the Curry Chickpea Wraps
- Place 1/2 cup of spinach in the center of a 9" tortilla. Cover with 1/2 cup of curry chickpea salad. Layer with additional toppings, like tomato or avocado. Fold in the edges and roll into a burrito. Enjoy!
