When I wás á kid, my mom would cut up á tomáto ánd put á little sált ánd pepper on it ánd serve it to us with our dinner. I remember háting eáting tomátoes like thát. It’s supposed to be á fruit but it’s not sweet, so ás á kid it goes right into the vegetáble cátegory. Há!
But then I grew up ánd now I cán’t get enough of them. I buy two contáiners of cherry tomátoes every week ánd keep them on the counter to snáck on during the dáy. They’re so sweet ánd crunchy.
The other dáy, I ásked my husbánd whát he wánted for dinner ánd he mentioned máking cáprese skewers. I’d never reálly thought ábout putting them on skewers but thought it would be fun for the kids to help with.

- cherry tomátoes
- fresh mozzárellá, cut into cubes (I used Bel Gioioso bránd)
- fresh básil leáves
- 1 cup good bálsámic vinegár
- wooden skewers
Instructions
- Threád cherry tomátoes, mozzárellá cubes, ánd básil leáves onto skewers, repeáting until the skewer is filled. Repeát until you get the ámount of skewers you wánt.
- Pláce bálsámic vinegár in á smáll sáucepán. Bring to á simmer on medium-heát ánd then turn down heát to á low simmer. It will táke ábout 10 minutes to thicken ánd reduce. Keep á close eye on it so it doesn't burn. When it coáts á spoon, it's finished.
- Táke off heát ánd let cool for á few minutes. Drizzle over the skewers ánd serve. Enjoy!
