- Paleo Meatballs
- 2 pound ground beef
- 1 tsp garlic powder
- 3 tbsp chopped sweet onions
- 1/2 tsp Pink salt (if desired, add another 1/2 tsp)
- 1 tsp black cracked pepper
- 1/2 tsp onion powder
- 1 tbsp oregano
- 3 tbsp almond flour (add a little more if the mixture is too wet)
- 1 large egg
- 1/2 cup OPTIONAL: chopped compliant pepperonis (omit all together for Whole30 compliant)
- 1 1/4 cup compliant pizza sauce (or see my recipe below)
- Compliant Pizza Sauce (Makes 1 1/2 Cup)
- 1 15 oz can tomato sauce
- 1 6 oz can tomato paste
- 1/2 tsp Pink salt
- 1/4 tsp cracked black pepper
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1 tsp Italian seasoning
- 2 tbsp water
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
INSTRUCTIONS
- Paleo Meatballs
- Preheat the oven to 400° and line a baking sheet with parchment paper.
- In a large mixing bowl, combine hamburger meat egg, onions, seasoning, salt, pepperonis, pizza sauce and almond flour (add a little more almond flour if the mixture is too wet). Mix until everything is completely combined.
- Use a cookie scoop or a big spoon to scoop the meat. Shape each meatball (1 1/2 inch)
- Place each meatball 1 inch apart on the baking sheet. Bake 22-25 minutes (depending on desired doneness). Use any extra sauce for dipping
- Paleo Pizza Sauce
- Add all ingredients to a medium size sauce pan and whisk together.
- Turn to medium/high heat and use a wooden spoon to stir occasionally as it cooks.
- Bring to a boil then turn to low. Cook for 20 minutes
- Serve immediately or store in fridge for up to 1 week.
