INGREDIENTS

  • Paleo Meatballs
  • 2 pound ground beef
  • 1  tsp garlic powder
  • 3 tbsp chopped sweet onions
  • 1/2 tsp Pink salt (if desired, add another 1/2 tsp)
  • 1 tsp black cracked pepper
  • 1/2 tsp onion powder
  • 1 tbsp oregano
  • 3 tbsp almond flour (add a little more if the mixture is too wet)
  • 1 large egg
  • 1/2 cup OPTIONAL: chopped compliant pepperonis (omit all together for Whole30 compliant)
  • 1 1/4 cup compliant pizza sauce (or see my recipe below)
  • Compliant Pizza Sauce (Makes 1 1/2 Cup)
  • 1 15 oz can tomato sauce
  • 1 6 oz can tomato paste
  • 1/2 tsp Pink salt
  • 1/4  tsp  cracked black pepper
  • 1  tsp  dried oregano
  • 1/2 tsp dried basil
  • 1  tsp  Italian seasoning
  • 2 tbsp water
  • 1/2 tsp onion powder
  • 1/2  tsp  garlic powder

INSTRUCTIONS

  1. Paleo Meatballs
  2. Preheat the oven to 400° and line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine hamburger meat egg, onions, seasoning, salt, pepperonis, pizza sauce and almond flour (add a little more almond flour if the mixture is too wet). Mix until everything is completely combined.
  4. Use a cookie scoop or a big spoon to scoop the meat. Shape each meatball (1 1/2 inch)
  5. Place each meatball 1 inch apart on the baking sheet. Bake 22-25 minutes (depending on desired doneness). Use any extra sauce for dipping
  6. Paleo Pizza Sauce
  7. Add all ingredients to a medium size sauce pan and whisk together.
  8. Turn to medium/high heat and use a wooden spoon to stir occasionally as it cooks.
  9. Bring to a boil then turn to low. Cook for 20 minutes
  10. Serve immediately or store in fridge for up to 1 week.
