Ideal for servings of mixed greens or marinades, these 3 Oil Free Vegan Dressings are stuffed loaded with new fixings and heaps of flavor.

Nuts and avocados are my two most loved normal fats for any dinner, yet particularly a dressing. They make the dressings rich and furthermore include a decent flavor.

The 3 dressings we are making today are an asian dressing, an avocado herb dressing and a smooth cashew dressing.

Make one (or these) on a Sunday and you will have dressings for the whole week prepared to go in the cooler.

Ingredients

  • OIL FREE ASIAN DRESSING
  • 1/3 cup soy sauce or tamari
  • 1/4 cup water
  • 2 tbsp rice wine vinegar
  • 4 cloves garlic finely diced
  • 1/2 inch fresh ginger peeled and finely diced
  • 2 tbsp agave or maple syrup
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha optional
  • 1 tsp red pepper flakes optional
  • CREAMY AVOCADO FRESH HERB DRESSING
  • 1 avocado peeled and pitted
  • 5 large basil leaves roughly chopped
  • 1/4 cup cilantro leaves loosely packed
  • 1/4 cup chives loosely packed
  • 1/2 lemon juiced
  • 1/4 red onion roughly chopped
  • 2 green onions roughly chopped
  • 1 clove garlic roughly chopped
  • salt & pepper to taste
  • CREAMY CASHEW HERB DRESSING
  • 1 cup cashews soaked in water and drained
  • 1/4 cup fresh dill loosely packed
  • 1/4 cup fresh chives loosely packed
  • 1/4 cup fresh parsley loosely packed
  • 3 cloves garlic roughly chopped
  • 1/2 lemon juiced
  • salt & pepper to taste
  • water as needed

Instructions

  1. OIL FREE ASIAN DRESSING
  2. Combine all ingredients in a small bowl and whisk together.*
  3. Taste and adjust seasoning as needed.
  4. CREAMY AVOCADO FRESH HERB DRESSING
  5. Add all ingredients to a food processor. 
  6. Blend on high until smooth. 
  7. Taste and adjust seasoning as needed.
  8. CREAMY CASHEW HERB DRESSING
  9. Soak cashews in cold water for 4 hours or in hot water for 30-60 minutes.
  10. Drain cashews. Add cashews, dill, chives, parsley, garlic, lemon juice, salt & pepper to a high speed blender. Blend on high until combined and smooth - adding water if needed. 
  11. Taste and adjust seasoning as needed.
