Since Cinco de Mayo is practically here, I have a simple and scrumptious Mexican-propelled formula for you today. We adore this Easy Chicken Tortilla Soup, which can be set up in the Instant Pot (or weight cooker), in a moderate cooker, or on the stovetop! It's loaded with flavor, but on the other hand it's solid. Include the same number of (or as couple of) tortilla chips as you like… it's totally adaptable!
Without dairy? Simply leave off the cheddar on top. The remainder of this soup is lean protein (chicken), beans, veggies, and stock. Vegan? Skirt the chicken in the "Simple Chicken Tortilla Soup," toss in an additional container of beans, and utilize vegetable juices. It's wonderful, it's healthy, and it's unimaginably simple!
I like to put the majority of the fixings in my moderate cooker and let it sit on my counter for the afternoon. In any case, on the off chance that you don't have a Crock Pot (or on the off chance that you simply don't have sufficient energy to cook it low and moderate), at that point no stresses – it will be similarly as great in a pot on your stovetop.
What's more, since I've at long last gotten on board with the Instant Pot temporary fad, I can guarantee you that my preferred Chicken Tortilla Soup is even flavorful in a weight cooker!
